Glazed Chile Chicken Wings
1.2 Kg. wings
1 tbsp peanut oil
3 cloves garlic, crushed
2 cm piece fresh ginger, peel and slice
4 small red chilies, sliced (fresh)
1 tbsp chili powder
1 tbsp cracked black pepper
2 tbsp. sugar
¼ cup chicken stock
¼ cup soy sauce
2 tbsp. oyster sauce
2 tbsp. plum sauce
1 tbsp rice wine vinegar
2 tbsp. lemon rind
¼ tsp. sesame oil
Trim and cut chicken wings. Boil for 3 minutes. Drain and pat dry. Heat peanut oil; add garlic and ginger, stir fry till fragrant. Add chilies, chili powder, pepper and sugar. Stir in stock, sauces, vinegar, rind and sesame oil. Bring to a boil, add wings, a
