Flax Cookies
¼ cup butter, softened
½ cup brown sugar
1/3 cup granulated sugar
1 egg
½ tsp vanilla
1 cup all purpose flour
¾ cup quick cooking oats
2/3 cup flax seeds
1 tsp baking soda
In bowl beat together butter and sugars until light; beat in egg and vanilla. In separate bowl whisk together flour, oats, flaxseeds and baking soda; stir into butter mixture until soft dough forms
Drop by level teaspoons on ungreased baking sheet. Bake in top and bottom thirds of a 350 degree oven, rotating and switching pans half way through until golden, about 12 minutes.
About 69 calories per cookie
