CRUNCHY BANANA BREAD

Crunchy Banana Bread

½ cup skim milk
1 ½ tsp white vinegar
¾ cup brown sugar
1 tbsp butter softened
1 cup mashed bananas
2 eggs
¼ tsp salt
1 cup whole wheat flour
1 cup all purpose flour
1/3 cup millet
1 tsp baking powder
1 tsp baking soda

In bowl combine milk with vinegar. In large bowl, beat sugar with butter, beat in banana and eggs. In another bowl, whisk together whole wheat and all purpose flours, millet, baking powder, baking soda and salt; stir into banana mixture alternately with milk mixture; making 3 additions of dry ingredients and 2 of milk mixture.

Scrape into greased loaf pan. Bake 350 degrees until tester comes out clean about 45 minutes. Let cool on rack for about 5 minutes then turn out on cake rack and let cool.
