CHICKEN CURRY

Chicken Curry

1 whole chicken


Cut in pieces, brown in hot oil on all sides. Drain fat.

Sprinkle chicken with:


1 tbsp salt
1 medium onion chopped
2 tbsp water
Cover and simmer 30 – 40 minutes

Remove from skillet, keep warm. Pour liquid from skillet into a bowl and skim the fat. Return ¼ cup liquid to skillet and stir in:

1 cup sour cream
2 tsp curry powder
1/8 tsp ginger
1/8 tsp cumin
Serve with Mango chutney
