BANANA CARROT CAKE

Banana Carrot Cake

1 cup sugar
1 cup mashed bananas, ripe
2/3 cup vegetable oil
2 eggs
1 ½ cups all purpose flour
2 tsp baking powders
1 tsp salt
½ tsp soda
1 tsp cinnamon
½ - ¼ tsp cloves
1 cup rolled oats
1 cup shredded carrots
½ cup chopped nuts, optional

Bake 350 degrees 40 minutes

Combine sugar, bananas, and oil. Add eggs, one at a time, beating well after each addition. Stir in combined flour, baking powder, salt, soda, and spices. Add oats and carrots, mix well. Spread into greased, 9 inch square baking pan, sprinkle with nuts.
