Naan Bread
1 ½ cups warm water
2 tbsp. sugar
1 tbsp. yeast
1 egg yolk
2 tbsp. butter melted
2 ½ tsp. salt
¾ cup whipping cream
¼ cup warm milk
6 cups flour
2 ½ tsp. baking powder
Bake on foil lined baking sheet or pizza pan
400 degrees approximately 10 minutes
or to grill
Place dough directly on grill over medium high heat, cover and bake for 3 – 4 minutes or until puffed and no longer moist and doughy inside.
In large bowl, whisk warm water with 1 tsp. of the sugar. Sprinkle in the yeast: let stand for 10 minutes. Whisk in remaining sugar, egg yolk, butter and salt. Stir in cream and milk. With wooden spoon, briskly stir in 5 cups of the flour and the baking powder to make soft dough.
Turn out on lightly floured surface; knead for 10 – 12 minutes, adding enough of the remaining flour if necessary to make dough smooth and elastic. Place in greased bowl, turning to grease all over. Cover with plastic wrap: let rise or until doubled in bulk. ***( may also place unrisen dough in a greased plastic bag and put in fridge for up to 1 day: let come to room temperature before proceeding.) Punch down dough.
