ETHEL'S EASY CAKE

Ethel’s Easy Cake

Cake
1 cup flour
1 tsp baking soda
1 tsp vanilla
1 (312 mg can) mandarin oranges
including juice
¾ cup white sugar
½ tsp salt
1 egg

Topping

2/3 cup brown sugar
2 tbsp butter
1 tbsp milk

Preheat oven to 350 degrees
Serve warm or cool, with ice cream or whipped cream

Mix together topping ingredients and set aside.

Sift dry ingredients together, add vanilla, egg, and can of Mandarin Oranges, including juice. Other fruit can be substituted to equal 1 cup total, with liquid. Mix and pour into greased 8 x 8 pan. Bake 30 – 40 minutes. Once baked immediately add topping and return to oven 5 – 8 minutes until topping is bubbly.
